Delicacy or work of art? It's hard to say because this cake is so original. Its conical shape sprinkled with sugar gives it the appearance of a tree covered in snow, perfect as an edible decorative element on a holiday table. But before getting there, we'll have to roll up our sleeves... Let's get started with Christophe who shares his recipe with us! 

Ingredients

  • 1kg of all-purpose flour fluid wheat
  • 1kg of sucre
  • 1kg of butter
  • 24 eggs
  • 1 glass of rhum Brown
  • 5 cl of vanilla 

Utensils

  • un cone in wood  
  • un spit
  • for the string
  • a ladle
  • a big bowl
  • du parchment paper
  • a plaque to collect the dough  

Preparation, cooking & serving

1. Preparing the dough 
  • Step 1 : Separate the whites from the yolks of the eggs, beat the whites until stiff and add a pinch of salt
  • Step 2 : Melt the butter over low heat
  • Step 3 : In 4 equal batches, add the sugar, then the butter, flour and egg whites to the egg yolks, mixing with a spatula
  • Step 4 : When you have obtained a homogeneous dough, add the rum and vanilla

2. Preparing the fire and cooking
  • Step 1 : Prepare the fire. Use small wood to have a constant flame (no embers). Ideal wood: ash, beech or hazel logs… 
  • Step 2 : Tie parchment paper around the wooden cone 
  • Step 3 : Heat everything on a spit in front of the fire 
  • Step 4 : Prepare a container to put under your pin to collect the excess dough. 
  • Step 5 : With a ladle, collect some dough and gradually pour it along the cone without stopping rotating the spindle. Repeat the process until there is no more dough.

3. Accompaniment & cake service

Let it cool a little before cutting it horizontally so as to obtain pretty washers revealing the different layers of the cake.

For your holiday meals, you can for example accompany it with a blueberry sorbet, ice cream or an iced log.

It is also ideal for to taste accompanied by honey, jam, compotes, custard...
