In the heart of our beautiful Pyrenees, in the Val d'Azun, meet Baptiste, a cheese shepherd, passionate about his profession. Discover its farm, its herds, its daily life, but also and above all its delicious cheeses!

In the Val d'Azun, on the slopes of the Col du Soulor in Arrens-Marsous, the Oumpré-Martinou farm is ideally located in the hollow of the mountains.

Of the farm

This pretty farm, Baptiste inherited it from his father who himself inherited it from his. A nice symbol of transmission, know-how and passion, this operation is in the image of these owners: authentic. Combining tradition and modernity, the farm has managed, over the years and generations, to keep the essentials alive: love of the profession and the land

“I chose this profession because my parents were farmers, my grandfather was also a farmer. So from a very young age I worked with them. Finally worked...I helped them. It wasn't a job, it was a passion. It happened like that, naturally. I loved accompanying my grandfather in the mountains, driving the tractor... So I took over the farm.”

The Oumpre-Martinou farm team

After his parents retired, Baptiste joined forces with Benjamin, a native of the country passionate about this profession. Between them, they continue the traditions of their ancestors while taking care to add their personal touch for continuous improvement. Two employees complete the team, Nicolas and Amaïa. The latter is mainly involved in the processing and refining of cheese. And of course, Baptiste's parents although retired, they still have an important place in life on the farm and continue to help the next generation, particularly in the summer, in summer pastures.  

The herds

The operation today is made up of 300 sheep and 40 cows. Added to this already substantial herd, around fifteen black pigs, which complete the breeding and make it possible to offer, in addition to cheeses, delicious delicatessen

Demanding, the profession of cheese shepherd follows the rhythm of the seasons, taking care to respect the traditions.

“Our animals are inside all winter, because there is snow and above all there is no grass to eat outside so we keep them warm inside and we feed them with all the fodder we make in the summer. We have forty hectares of natural meadows on which we make two cuts, hay and regrowth. Afterwards, autumn and spring, they are in buildings at night. And during the day, they go out on the Col du Soulor side, we have very steep terrain, it's grazing land, so they will graze on the grass during the day. We bring them in in the evening, we milk them, they spend the night inside, we give them one more meal, in the morning we milk them before they go out. And summer, they go on a summer pasture to the Arcoeche cabin, 1,5 km after the Tech dam. My parents spend the whole summer there from mid-June to mid-September and we go there to milk the animals and we come back down to do the processing.”

Focus on... transhumance

Every summer, the animals go to summer pastures to reach high altitude pastures, this is what we call transhumance. While they graze freely, the breeders are free to harvest the fodder needed for the winter. This pastoral tradition also makes it possible to maintain the high altitude lands. Beyond a simple herd movement, transhumance is an integral part of the identity of the territory. Since December 2023, transhumance has been recognized by UNESCO as an intangible cultural heritage of humanity.

Cheese and cold meats

Cazaux Cheeses labeled “Tomme des Pyrénées” and “Val d'Azun - Pyrénées” come from milk from herds and are processed directly on the farm.

Salting

“We do everything from A to Z, that is to say our animals are born here, we milk them when they are adults, all the milk is transformed into cheese, we mature our cheeses right here and we sell 70-80 % of our production, here at the store. We supply restaurants, regional product stores and mountain refuges in the Pays des Gaves."

Pure cow, pure sheep, mixed, greuil or even raclette cheese, these delicious cheeses have won several medals at the Agricultural Show in Paris. Find them by the tomme or by the cut on site, in the shop and at the Arrens producers' market.  

To complete your raclette or aperitif boards, Ferme Oumpre Martinou now offers black pork charcuterie. Raised on the farm, the pigs are then processed in the Ateliers Sajous. Ham, belly, pâté and other savory treats can be found at the shop in January, February, July and August!

but not only ! 

Alongside his days on the farm, Baptiste is an accomplished sportsman. In winter it is also ski instructor à the Nordic Area of ​​Val d’Azun where it notably offers “skiing with a shepherd” outings. “In winter, if the station is open, I work morning and evening on the farm and I am absent during the day to give ski lessons on the slopes of Couraduque or Soulor. I have developed a service where I offer people an introductory course between noon and two, I talk to them about my job as a shepherd and I take a small snack to taste the farm products. "

Very active, he also does a lot of trail running and cycling outings. “My passions outside of agriculture are sport. Since I was young, I have done a lot of sport. I naturally started here with cross-country skiing. I did quite a bit of bike also, at high level and cross-country skiing on long distance formats which allowed me to travel almost everywhere in Europe. And now I'm doing between because it is related to my work. Especially in summer when I go to see the animals in the mountains, it’s the equivalent of a good workout.”

The visits

at the farm 

Many of us enjoy cheese all year round, but they are all the more appreciated when you really know where they come from and how they are made!  

Visits and tastings 

A space dedicated to welcoming the public has been designed at the farm to be able to receive visitors and explain to them how a farm operates. Through a film of around twenty minutes retracing all a year of activity on the farm, we learn more about the profession in all seasons. A museum of old tools is also accessible and allows us to immerse ourselves in the history of mountain agriculture. Then the visit continues with the discovery of animals, milking, and ends with a good tasting.

Evenings on the farm 

After the visit, those with a sweet tooth can even dine at the farm with a good squeegee to extend the discovery on a friendly and warm note. Cheese and charcuterie from the farm will obviously be there. Enough to end the day in style!
For total immersion, the farm also does bed and breakfast. Enough to live to the rhythm of a mountain farm during a stay in the heart of the Val d'Azun.
