Preparation, cooking & serving
- Step 1 : Separate the whites from the yolks of the eggs, beat the whites until stiff and add a pinch of salt
- Step 2 : Melt the butter over low heat
- Step 3 : In 4 equal batches, add the sugar, then the butter, flour and egg whites to the egg yolks, mixing with a spatula
- Step 4 : When you have obtained a homogeneous dough, add the rum and vanilla
- Step 1 : Prepare the fire. Use small wood to have a constant flame (no embers). Ideal wood: ash, beech or hazel logs…
- Step 2 : Tie parchment paper around the wooden cone
- Step 3 : Heat everything on a spit in front of the fire
- Step 4 : Prepare a container to put under your pin to collect the excess dough.
- Step 5 : With a ladle, collect some dough and gradually pour it along the cone without stopping rotating the spindle. Repeat the process until there is no more dough.
Let it cool a little before cutting it horizontally so as to obtain pretty washers revealing the different layers of the cake.
For your holiday meals, you can for example accompany it with a blueberry sorbet, ice cream or an iced log.
It is also ideal for to taste accompanied by honey, jam, compotes, custard...
